So thanks to Kate, I am starting my own food blog. I will be sharing recipes and will be hoping to find some to try! I strive to make most of my recipes healthy- plant based, fresh, unprocessed, and ideally low in calories.
Living in Boston, I have an unusual style when it comes to food. When people visit New England, they immediately think “seafood!” However, I steer clear. Whether it is the feel of a slimy fish in a pond or the smell of fish in a dumpster, I have a personal rule to not eat anything that swims. I can hear you now: “What?” “Ah!” , “She’s missing out on a whole world of cuisine!” But nonetheless, despite pleading and begging from my brother and father, I do not eat seafood. Therefore, I am forced to become that much more creative with my summer cuisine.
The first recipe I will share with you is my favorite. And it’s always a hit at parties! It brings together two of my favorite summertime (and anytime) tastes: mango and avocado. It is so easy, and so cheap.
You will need 1 avocado, 1 mango, 2 tbsp of olive oil, 1/4 cup of chopped red onion, cilantro (yum !), chili pepper (I like using the herb pastes – they are sold usually right next to the herbs – makes the recipe even quicker!), salt and pepper. Most of these ingredients are probably already in your pantry or refrigerator!
First, peel the mango. Then, halve and pit the avocado. Dice both the mango and avocado. Once you have diced the mango and avocado, add the remainder of the ingredients. Stir the ingredients together and voila! You have a unique, tasty, summertime treat. It has good fat (in the avocado and olive oil) while it supplies a serving of both vegetables and fruit!

You can serve the dip with tortilla chips, pita chips or even put it on top of a salad! I have also found this as a great topping for burgers or grilled chicken. Either way it is a great summer appetizer or condiment!
